Easy 5 Ingredient Summer Salad

  • First thing’s first, here’s what you need:
  • 1 English cucumber
  • Grape (or cherry) tomatoes
  • 1 Bell pepper (orange or yellow)
  • 1 Red onion
  • Feta cheese
  • You’ll also need oregano, oil, and vinegar.

What’s For Lunch Wednesdays

Welcome, beautiful people!
I promise not to break into an unnecessarily long soliloquy about things unrelated to this recipe, but if you’ll indulge me for a moment there is a brief intro. 😉
To those who know me super well, I am notorious for making food-related faux pas on a semi-regular basis. My mom is the best cook in the universe, so naturally I should be decent, right? Nah. I was far too stubborn as a child to pay attention in the kitchen (sorry, Momma). However, in recent years I’ve started getting better in the culinary field, or at least I have tried a lot harder. I’m also getting married soon which is a good motivator to get better at cooking/baking — primarily because my man makes really good meals for me, and I want to be able to return the sweet gesture. ❤ Without further ado… let’s get started! I love this because it’s aesthetically pleasing, delicious, easy, and super cheap!!!


  1. Cut the cucumber in half, then cut it in half again longways, and chop that bad boy up!





  2. Grab about 14 of your tomatoes and slice them in half.





  3. This is oddly specific, but use only about 1/6 of your red onion and chop that as well.





  4. Chop 1/2 of the bell pepper. (Look how pretty those colors are!!)





  5. I should let you know that I’m a cheese-oholic, so for this I throw in a hand full of feta.





  6. 2 tablespoons olive or vegetable oil.





  7. 2 tablespoons vinegar (I used white vinegar but you can use a different kind if you prefer, e.g., red wine vinegar).





  8. A few shakes of oregano! (Great health benefits, by the way.)





  9. Mix it all up!





  10. Now I recommend covering it up and popping it in the fridge for about 5-10 minutes to give in some extra bounce.





  11. Take it out of the fridge, sprinkle a little extra feta (I was not kidding — I love cheese), mix it one more time, and ENJOY!!!


    Serving size: Roughly 2 servings




    (NOTE: If you don’t like/can’t eat cheese, you could substitute it for black olives to keep a good variety of foods in there!)

  1. You listened enough to follow recipes and to know basic kitchen skills. Make the rest your own! I put my own spin on every recipe may dad taught me and everything I find online. It was so serious when my dad was teaching me, because he wanted me to learn everything he knew about culinary arts. “Stick to the recipe” he would always say. I didn’t give myself permission to color outside the lines in the kitchen until just a few years ago. It’s supposed to be fun! Keep trying new things, I am so proud of you! Mom
